Hi guys, I've been using Henckls for the longest time. i have the whole set (filleting/carving/etc bla bla bla) and they are still as sharp as the day i got them. i treat them better than my girlfriend (i hope she doesn't see this) And now, i feel i am ready to give a loving home to a knife to rule all knives. I've narrowed down my search of highly regarded bladesmiths to Katsushige Anryu & Teruyasu Fujiwara Am i missing anyone?
